Zarzo intends to foster a historical circle: the Mexican ingredients that crossed the ocean centuries ago, entered the kitchens of other countries, and returned transformed, together with the new ingredients that arrived from all over the globe, now find our own expression in the food we prepare here.
Our manifesto
We believe that truly authentic Mexican food can only be found in Mexico; what we offer here is our way of sharing our heritage and the dialogue we have with the place we now call home. It is cuisine in motion, shaped by roots and routes, and by the infinite exchange that migration creates. We want to be participants of the living story that continues to unfold in the endless evolution of gastronomy.
